SPICY BACON CHEEZERS

INGREDIENTS
- 4 slices of bacon
- 100g grated/shredded Parmesan cheese
- 120g grated/shredded sharp or mature Cheddar cheese
- 1 jar sliced jalapeños
- ground black pepper or smoked paprika
METHOD
Step 1: Preheat oven to 190°C or 375°F.
Step 2: Open jar of jalapeños and place slices on paper towels to absorb brine. Set aside until later.
Step 3: In a large frying pan, over a medium heat, cook the bacon until crispy. This will take about 8 minutes. Remove bacon from the frying pan and drain on paper towels, set aside until cool. Once bacon is cool, chop or crumble it into small pieces.
Step 4: Spoon a small mound of Parmesan cheese (about 1 Tbsp) onto an oven baking tray/cookie baking tray and top with 1 Tbsp of Cheddar cheese. Repeat this, covering the tray with mounds evenly spaced (about 2 inches apart) with room to allow for spreading.
Step 5: Carefully place a jalapeño slice and a sprinkle of bacon on top of each mound. Season with black pepper or smoked paprika to taste.
Step 6: Bake until crispy and golden. This will take about 10 to 12 minutes, but do watch so that they don’t burn.
Step 7: Allow cheezers to cool on the baking tray so they firm up before serving.
